DESCRIPTION

Xylitol, called "birch sugar" is a sweetener obtained from the wood of deciduous trees, mainly birch. Xylitol is a substance of natural origin used as a substitute for white sugar. The glycemic index of xylitol is close to 8, which means that it is processed in the body with minimal insulin, and the energy value is only 240 kcal per 100 g, or 12 kcal per teaspoon (5 g). The production of xylitol takes place without the participation of yeast. Xylitol does not ferment and does not caramelize.

HOW TO USE

1. as a table-top sweetener, where one teaspoon of xylitol corresponds to about 1 teaspoon of white sugar.
2. for sweetening dishes, desserts, beverages
3. for baking, taking into account that xylitol is not a nutrient medium for yeast and that it is highly hygroscopic and does not caramelize.
